blog-med. potato saladIn the summer, I like to grill out almost every night. Nothing feels better than to stand out in the beautiful weather and enjoy while the smell of freshly grilled food pours into your nose. With that, of course, comes enjoying the food outside on the patio table.

A recipe blog that I visit quite often is Simply Recipes. It is full of recipes that are healthier and cleaner-eating. By this, I mean that they aren’t full of preservatives and the food isn’t processed.

One recipe that caught my eye when I was looking around this weekend is a recipe for Mediterranean Potato Salad. This is something that looks delicious to me and involves new potatoes, green beans, red bell peppers, red onion and green olives and has a delicious vinaigrette dressing on it. I found this recipe while browsing around on Pinterest. It instantly caught my eye and got my attention. I was led to the Kraft Velveeta page and got the recipe. We tried it out a couple of nights ago and LOVED it. I think this is definitely something that we’ll be making again soon!

Here’s the recipe (originally found here)

 

Ingredients:

1 lb.  ground beef
1/3 cup  TACO BELL® Thick & Chunky Salsa
1-1/2 tsp.  chili powder
2 cups  (8 oz.) elbow macaroni, uncooked
1/2 lb.  (8 oz.) VELVEETA®, cut up
Directions:

BROWN meat in large skillet on medium-high heat; drain.

STIR in 2-3/4 cups water, salsa and chili powder. Bring to boil. Stir in macaroni; cover. Reduce heat to medium-low; simmer 8 to 10 minutes or until water is almost absorbed.

ADD VELVEETA; cook until melted, stirring frequently. Garnish with 1/2 cup crushed tortilla chips, 1/4 cup chopped tomato and 2 Tbsp. chopped green onion, if desired.

I’m such a sucker for anything with cinnamon and icing. I can’t walk past the “Cinnabon” in the mall without instantly drooling.

I found this recipe on Pinterest and thought it looked great. I tried it out last weekend and it was a huge success! They were gone within a few days but I’m just glad that everybody liked them as much as I did. The picture and recipe is taken from this blog right here. Check it out or look below for the recipe.
Ingredients
1 box yellow cake mix (butter pecan would also be delicious I’m sure)
1/2 cup melted butter
2 eggs
1/2 cup packed brown sugar
1/4 cup sugar
1 1/2 tablespoons cinnamon

Icing
2 tablespoons milk
2 cups powdered sugar

Directions
Mix all ingredients and pour into a greased 9″x13″ baking dish. Bake at 350degrees for 25 minutes.
When perfectly baked remove from the oven and pour icing over the top.

I LOVE cooking and baking, and even more recently my passion includes grilling. I’ve been shopping non-stop at CHEFS, which is an amazing site for all things kitchen and cooking. They have things that are very common and practical and also carry a line of super cool, unique items that I’ve never seen before! I have to admit that I’ve ordered some of both, sometimes out of pure curiosity.

What are some of the things they carry? Just to name a FEW, I’ve seen an herb keeper, kitchen squeeze bottles, a potato ricer, garlic press, a strainer, pancake batter dispenser, chicken roaster, egg holder, Ove Glove, jar opener, citrus juicer, and SO much more.

I honestly wish I could register on here for my wedding. There are SO many more things that I would love to buy!
