blog-taco mac and cheeseI love tacos and I love macaroni and cheese. So it’s a given that when the two are combined it’s the best thing EVER!

I found this recipe while browsing around on Pinterest. It instantly caught my eye and got my attention. I was led to the Kraft Velveeta page and got the recipe. We tried it out a couple of nights ago and LOVED it. I think this is definitely something that we’ll be making again soon!

Here’s the recipe (originally found here)



1 lb.  ground beef
1/3 cup  TACO BELL® Thick & Chunky Salsa
1-1/2 tsp.  chili powder
2 cups  (8 oz.) elbow macaroni, uncooked
1/2 lb.  (8 oz.) VELVEETA®, cut up

BROWN meat in large skillet on medium-high heat; drain.

STIR in 2-3/4 cups water, salsa and chili powder. Bring to boil. Stir in macaroni; cover. Reduce heat to medium-low; simmer 8 to 10 minutes or until water is almost absorbed.

ADD VELVEETA; cook until melted, stirring frequently. Garnish with 1/2 cup crushed tortilla chips, 1/4 cup chopped tomato and 2 Tbsp. chopped green onion, if desired.

lozoI try to save money whenever possible. Spending money that’s unnecessary sure adds up quickly, but saving money seems to add up quickly, too! I’m done several things to manage my budget lately, including downloading a great app from the Apple iTunes app store (called Ace Budget 2–check it out!) Now that I know what I have to work with, I am trying to stretch that budget as far as it will go.

I found a website called Lozo. You can type in your grocery list (or even copy and paste a recipe) and it will find coupons that match your list. This is free to use and can save a ton of money! I will never go to the grocery store again without checking this out.

There’s nothing I love more than a good hot dish. This may be the Norwegian in me, but I love almost any casserole, hot dish, or anything with mayonaise! This is why it’s necessary that I do my Jillian Michaels work out every day–so I can keep up with my less-than-healthy eating habits.

I found a new casserole on Pinterest last week and I tried it out tonight. It turned out great and I think it’s easy to say we’ll be making it again! This is chili mac (recipe and picture can be found here, or check it out below).

You will need:
½ lb ground sirloin
1 shallot, small diced
1 cloves garlic, minced
8 oz  petite diced tomatoes, slightly drained
3 T tomato paste
7 oz kidney beans, drained & rinsed
2 c low-sodium beef broth
1 ½ t chili powder
1 t cumin
½ t paprika
½ t dried cilantro
1 /4 t salt
¼  t dried oregano
1 c elbow macaroni
1 c shredded cheddar cheese
2 T King Arthur Vermont Cheese Powder
Toppings: shredded cheese, cilantro
Add ground beef, onion, and garlic to a very large skillet over medium-high heat. Season with salt & pepper then cook beef until no longer pink. Drain then return to the skillet.
Add petite diced tomatoes, tomato paste, kidney beans, beef broth, and spices to the skillet. Bring to a boil then add macaroni noodles and place a lid on top. Cook for 5-7 minutes or until noodles are just barely al dente (do not overcook,) stirring once. Add cheese then stir until smooth. Let dish sit off the heat and thicken for 10 minutes before serving.


blog-pizza burgersMy two favorite foods are pizza and cheeseburgers. When I found a recipe that combined the two I was ecstatic! I found the recipe on this blog and had to try it out right away.

Here’s the recipe for pizza burgers:

You will need:

1 lb ground beef
1/2 lb shredded cheese (mozzarella is my favorite for this recipe)
1/2 tsp salt
1/2 tsp sage
1 tsp oregeno
1 15 oz. can of pizza sauce
2 1/2 tsp dry parsley
1 8-pack hamburger buns


1. Brown the ground beef and drain.

2. In a mixing bowl combine hamburger, pizza sauce, parsley, oregano, sage and salt. Stir well.

3. Split each of the hamburger buns and lay them out on a cookie sheet. Toast for 5 minutes in the oven at 425 degrees.

4. Remove the hamburger bun halves from the oven and scoop ground beef mixture onto the buns.
5. Sprinkle cheese on top of the hamburger. Today I added a couple of green olive slices for a little more flavor.6. Bake at 425 for an additional 5-7 minutes until cheese is melted. Serve with your favorite sides and enjoy!

I work for an engineering company, and part of my job description is to be in charge of efficiency. This mean that I have to have an overview of the entire company, and look for the best ways of doing things. One of the most important things I do, is trying to find the best way to save energy, in labor and in money. One of the biggest things I have had to do so far, as well as one of the biggest improvements in the company I have made, is finding the most efficient stators. This is something that our company really needed help on. I did all my research and finally found the company with the best possible stators we were looking for. They run so smoothly, clean and work very well with our other machinery. Since we have switched stators, the company has saved so much money. With the new stators working so well, it helps the other machinery work well also. Searching for the right product is really the smart way to save money!
